a fishy situation

I am OBSESSED with salmon. I seriously love it. I just eat the smoked salmon strips like a fat person would eat crisps. It's really good for your skin and hair so I don't feel too guilty about eating mounds of it. Anyway, I saw a recipe in a magazine for Honey-seared salmon with sesame noodles and decided to make it as it sounded ultra NOM. Here's the recipe:

Honey- seared Salmon with Sesame Noodles
(serves 2)
- 2 strips rice noodles
- 2tbsp sesame oil
- 2 thick salmon fillets, skinned and sliced into 2cm thick strips
- 1tbsp runny honey
- 1tbsp soy sauce
- 2tbsp sesame seeds
- 1 bunch spring onions, sliced
- 2 handfuls of bean sprouts
- 100g spinach leaves

1. Cook the noodles; drain, add a little sesame oil. Toss the salmon with the honey and soy sauce.
2. Heat a non-stick frying pan over a high heat and toast the sesame seeds until golden. Remove from pan.
3. Add half the oil to the pan; once hot, cook the salmon for 1 minute on each side (keep the rest of the and soy mix in a dish). Remove from pan and keep warm.
4. Add the remaining oil to the pan; fry the noodles, spring onions and bean sprouts.
5. Add the spinach, seeds and remaining honey and soy mix. Toss until spinach wilts.
6. Sit the honey-seared salmon on top of the noodles and spinach, then serve.

The recipe is made for two people but I just halved most of it because I was just cooking for myself. The salmon with that sauce was to die for. It was just the perfect balance between sweet and sour. Just looking at it again has made my mouth water :D
